WEEKLY RECIPES

I have been in the food industry all my life and cooking is a great passion of mine. My interest in the culinary arts developed early on. As a teenager, I watched my mom cook and helped her write recipes for our Stong's weekly flyer. As I became older, I began cooking and experimenting with new recipes before introducing them to my friends and family.
There were many pitfalls and disasters along the way but each episode became a learning experience. I cooked my very first turkey when I was 23 and living in Portugal. We used a skipping rope to tie up the bird and it seemed like a great idea until the plastic handles melted in our wood-burning oven! I have amassed a wonderful collection of cookbooks over the years and I read them passionately; the same way some people read romance novels. Inspired by the various ideas I found in these books, I started creating my own recipes. I enjoy catering for friends and family. This gives me ample opportunity to try out new recipes and get some valuable feedback.

GRILLED HALIBUT SKEWERS


Ingredients

1/2 Cup dry white wine(chicken broth can be substituted),
2 tbsp. lime juice, 2 tbsp.finely chopped onion,4 tsp. olive oil, 1/2 tsp salt, 1/2 tsp.dried thyme, crushed, 1 tsp soya sauce,1/2 tsp. pepper, 2 Royal Gala apples cored and cut into 1" cubes, 16 or so white mushrooms cleaned and stems trimmed, 1 medium sweet red pepper, cored, seeded and cut into 1" pieces, 1 small onion, cut in 1" squares and seperated. 1lb Halibut, cut in 1" to 1 1/2" cubes.
Metal skewers or bamboo.(if using bamboo soak them in water for half hour before using)

Combine wine, oil, lime juice, chopped onion, salt, thyme, soya sauce, cumin and pepper and mix well. Marinate remaining ingrdients in mixture 1 to 2 hours. Thread apple, pepper, mushroom, onion and halibut on long metal or bamboo skewers, repeat five times on each skewer, ending with apple.
Broil or grill 4 to 5 inches from heat 6-8 minutes or until fish flakes when tested with a fork.
