It's soup season! This soup is rich and creamy (without the cream!) and loaded with fibre and protein to keep you full for hours. The secret ingredient? Cannellini beans! Best of all it's super simple to make and kids love it!

Makes 3 servings

Ingredients:

  • 1/2 onion, diced

  • 2 small cloves of garlic, chopped finely

  • 5 Roma tomatoes, roughly chopped

  • 1 cup cherry tomatoes, sliced in half

  • 2 cups low sodium broth

  • 1 can cannellini beans, drained and rinsed

  • 5 cloves

  • Olive oil

Instructions:

  1. In a large pot, heat over medium and add olive oil. When the pan is hot, add garlic and onions and sauté until golden

  2. Add all other ingredients and bring to a boil, let cook for 20-25 minutes to allow the flavours to incorporate

  3. Remove from stove, let cool, then puree in a food processor until smooth
