Strawberry Sugar Cookies
Just in time for Valentine’s Day, let’s make soft and chewy Strawberry Sugar Cookies (no food colouring needed!)
Makes: ~15 cookies
Bake time: 9–11 minutes
Ingredients:
½ cup salted butter, softened
¾ cup sugar (½ cup white + ¼ cup brown)
1 large egg
1 tsp vanilla extract
1½ cups all-purpose flour
½ tsp baking powder
¼ tsp baking soda
½ cup freeze-dried strawberries, finely crushed (about 1 cup whole before crushing)
Instructions:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Place freeze-dried strawberries in a bowl (or a bag) crush into small bits + powder. Set aside.
Cream butter and sugar until light and fluffy (1–2 minutes).
Beat in egg and vanilla until smooth.
In a bowl, whisk together flour, baking powder, baking soda, and crushed strawberries.
Add dry ingredients to wet ingredients and mix just until combined.
Scoop 1½ tbsp dough, roll into balls, and place on baking sheet.
Bake 9–11 minutes, until edges are set but centers are soft & cool 5 minutes on the pan before transferring to a rack.
