Smoked Salmon Cucumber Bites

Prep Time: 10 minutes 

Makes 12-15 bites

Ingredients:

  • * 1/2 English cucumber, sliced into ¼–½ inch rounds
    * 2oz smoked salmon, cut into small strips
    * 3 tbsp cream cheese
    * 1 tsp lemon juice
    * 1 tsp dill (fresh or dried; fresh is best)
    * ½ tsp lemon zest
    * Pinch of salt + pepper
    * Optional toppings: capers, extra dill, sesame seeds

Instructions:

1. Prep the cucumber:
 Slice into rounds and pat dry with a paper towel (helps the topping stick).
2. Make the dill spread:
 In a small bowl, stir together cream cheese, lemon juice, lemon zest, dill, and salt & black pepper until smooth.
3. Assemble: Add a small dollop of the dill spread onto each cucumber slice.
4. Top with salmon: Add a small twist or strip of smoked salmon onto each dollop.
5. Garnish with a caper, sprinkle of dill, or sesame seeds if desired.
6. Serve immediately or refrigerate for up to 2 hours before serving.
